The Canadian Pacific Steamship Company operated many ships that would be interesting for the purposes of this game. The Empress of Ireland has already been mentioned in another thread. Others include:

Wow those actually look like they might make decent maps.

And a ship of that size would be impossible to find your quarry in 90 seconds, especially if there moving
